Taco Meatballs

Taco Meatballs In the Air Fryer

Spicy, delicious meatballs you can use so many ways. Put them in a hoagie. Put them on top of a salad with a little salsa and sour cream. Serve them on a party platter with toothpicks and individual dip cups. Very easy recipe. You can serve them immediately or freeze them to use in a pinch when you need to serve up an appetizer quick. And of course, they are always great to add to a spaghetti sauce. Who needs frozen meatballs from the supermarket when you can make your own.

Ingredients

  • 1 lb ground beef

  • 2 eggs

  • 1/4 cup salsa

  • 1 tsp paprika

  • 1 tsp cumin

  • 1 tsp salt

  • 1 tsp pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp crushed red pepper

  • 1/2 tsp Italian seasoning

  • 1/2 cup seasoned bread crumbs

Directions

  • Break up ground beef in large bowl. Add eggs and salsa. Combine well.
  • Add in the seasonings and breadcrumbs. Mix until everything is thoroughly combined.
  • Shape each meatball into the size of a golf ball. You should end up with about 20 meatballs.
  • Place your meatballs in a single layer in your air fryer, with none of them touching each other. Depending on the size of your air fryer, you may have to work in batches. Cook at 375 degrees Fahrenheit for 10 -15 minutes until they are browned and reach an internal temperature of 160 degrees Fahrenheit.

Let’s Bring Pizza Balls To The Party

Any time I’ve brought these yummy, saucy, cheesy pizza balls to a party they were an instant hit. They are filled with flavor and make a great hand held snack for th wanderers in the crowd.

 

 

Cheesy, Saucy Pizza Ball Snacks

Cheese, Pepperoni and sauce all wrapped up in a delicious pizza dough, air fryed to delicious perfection.

Ingredients

  • 12 oz Pizza dough

  • Pizza sauce

  • Shredded mozzarella cheese

  • Pepperoni, sliced thin

  • Flour Glue (In small bowl mix 5 parts water to 3 parts flour - mix well, till a smooth thin paste is formed) This will be your binder.

  • Olive oil, for brushing balls with

  • Sesame seeds

  • Everything bagel mix

Directions

  • Let pizza dough rise in covered bowl at room temperature till double in size.
  • Stretch out the dough on lightly floured surface to a 12x 8 rectangle. Cut into 8 even squares (about 1.8 ounces each.
  • Cover with parchment paper and a kitchen towel. Let rest 20 minutes.
  • Stretch each square gently into 4x4 squares. Work one square at a time, keeping the other squares covered.
  • Apply thin line of flour glue on all edges of square.
  • In the middle of the dough square, place 1 TB sauce, and on top of that, 1 TB cheese and then 3 slices pepperoni on top of the cheese. Top pepperonis with a little more cheese.
  • To form a ball, gently pull one side of dough over half the ingredients, and then pull the opposite side of the dough oven the rest of the ingredients , overlapping the first side. Pinch the other two ends closed. Place a small amount of flour glue on each pinched end and pull to the middle. All of the inside ingredients should be covered by dough at this point. Gently roll your ball on a floured surface forming into a ball.
  • Repeat step 7 with the rest of the squares until you have 8 pizza balls. Place on a parchment paper lined tray and place in the freezer.
  • Preheat air fryer to 390 degrees Fahrenheit.
  • When air fryer is done preheating, working in batches, place your pizza dough balls in the air fryer with a little space between each ball.
  • Brush each dough ball with olive oil and sprinkle sesame seeds and everything bagel mix over them.
  • Cook for 5 minutes, turn over and cook 5 more minutes, or until a golden color.
  • Let cool and serve with ranch dressing or Marinar sauce.

Notes

  • These can be made ahead of time and frozen in a freezer safe container for up to 3 months. On the day of the party, you can reheat them in the air fryer for about 5 minutes.

These tasty treats are so easy to make. I always keep a batch in the freezer. You just pull them out and toss them in the air fryer. 

I get so many compliments from people when I bring these guys to the party.

Cheesy Pleasy Pizza Popper Pleasers

These guys go fast, so make sure to make an extra batch. If stored properly they are good for up to 5 days in the fridge and up to 3 months in the freezer.

You can use store bought pizza dough, but I recommend you use My go-to Pizza Dough Recipe. Its soft, airy texture is perfect for this recipe.

Ingredients

Directions

  • If pizza dough is refrigerated, bring to room temperature in covered container (1 - 2 hours).
  • If cooking in oven, preheat to 450 degrees Fahrenheit. For air fryer - preheat to 400 degrees Fahrenheit.
  • On lightly floured surface, divide dough into 12 2.5 oz balls. Flatten into squares, leaving space between each square. Cover with clean kitchen towel and let dough rest in warm place for 15 minutes.
  • Roll out each square a little more, without tearing the dough. Cover and let rest another 10 minutes.
  • Roll out each square one more time to approximately 5x5 inches each. Cover one last time and let rest 10 more minutes.
  • Working one square at a time (keeping the other ones covered), Place 1 TB mozzarella cheese in middle of square. Place 1 pepperoni slice on top of cheese. Spoon 1 TB of sauce on top of pepperoni. Place another pepperoni on top of sauce. Put 1 more TB mozzarella cheese on top of 2nd pepperoni.
  • Gently pull up corners of dough, one at a time to cover ingredients. Seal dough and gently pack it into a ball with your hands, like you would a snowball. Then gently roll the sealed ends around on the lightly floured surface to smooth it out. Place the balls, seal side down on a lightly oiled, aluminum foil covered baking sheet. Repeat for the rest of the balls, being sure to leave space between each ball.
  • Brush each ball with olive oil. Then sprinkle sesame seeds on top (optional). For oven, place baking sheet in oven and cook till a light golden brown (about 20 minutes) For air fryer, cook in batches, being sure to keep a little space around each ball, cooking till golden colored (about 8 - 10 minutes).
  • Let cool a few minutes and serve with pizza sauce or ranch dressing for dipping.

Cook up a plate of old school corn fritters

Mom's Corn Fritters

This was one of my favorite side dishes growing. My mom would mix up a big batch. We would eat them as fast as she could make them. Simple delicious way to eat your veggies.

Ingredients

  • 1 egg

  • 1 14 oz can Creamed corn

  • 1/3 cup all purpose flour

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Oil for frying

  • Butter for serving

Directions

  • In medium sized bowl, whisk egg. Mix in the creamed corn.
  • In separate bowl combine flour, baking powder, salt and pepper.
  • Slowly add flour mixture to egg and corn while stirring with whisk. Mix well until all ingredients are thoroughly combined.
  • Heat frying pan, medium high and add 1 Tbs of oil. Swirl pan to coat it.
  • Working in batches, drop the batter into the hot pan, forming circles. Be sure to leave space between each fritter.
  • Cook for 2 minutes or until top of batter starts to bubble. Flip and cook other side for another minute. If fristters start to burn, lower heat to medium.
  • Fritters are done when both sides are golden brown.
  • Place cooked fritters on cooling rack while cooking the rest of the fritters. This will prevent your corn fritters from getting soggy.
  • Serve hot with a pat of butter atop each corn fritter.

Notes

  • You can store corn fritters in the refrigerator for 3 - 5 days or freeze them in a sealed freezer container for up to 3 months.

In the mood for some pizza sandwiches? These miniature calzones are full of pizza flavor. While this recipe is for a cheese and pepperoni calzone, you can customize them anyway you like.  Hot peppers, sauteed onions, whatever you or your guests desire.

Directions

  • Take pizza dough from fridge and allow to rise at room temperature in covered bowl for two hours.
  • Preheat oven to 450 degrees Fahrenheit
  • Spread pizza dough out on a lightly floured surface with your fingers. Separate into 8 equal pieces. Roll each piece into a dough ball. Cover your 8 dough balls with a clean kitchen towel and let rest for thirty minutes.
  • Roll each dough ball into a square, keeping the other balls covered as you work. Toss and spread dough with your fingers to spread it out.
  • One square at a time, in diamond placement, spoon 2 tablespoons of pizza sauce on one half of the diamond, then spread a layer of cheese on top of the sauce Next lay down about 8 pepperoni slices over the cheese, and then one more layer of cheese.
  • Brush a little water around the edges of the dough as a sealing agent. Then fold bare half of diamond over the other half. Use a fork to form a seal all around the edges.
  • Using a spatula, carefully place calzones on lightly oiled aluminum foil lined baking sheet, being sure to allow space between each calzone.
  • Brush olive oil over top of each calzone and sprinkle with Everything Bagel seasoning.
  • Bake in oven for 30 - 40 minutes or until top is golden brown. Let cool on baking rack for 5 minutes.

Notes

  • You can serve this with a pizza sauce dip or ranch dressing. Very good.

Let’s Make a Pizza

Check out My go-to Pizza Dough Recipe or use store bought pizza dough if you don’t have the time to make your own. If using my recipe, be sure to make the dough the night before you need it. It makes a really tasty, crispy, airy crust. Really yummy.

Delicious pizza you can make at home

Double bake homemade pizza. So delicious.

Ingredients

  • Pizza Dough My go-to Pizza Dough Recipe or store bought

  • 1/4 cup flour for working the dough

  • small amount of Semolina flour for dusting the pizza peel if you have it, all-purpose flour if not.

  • 1/4 cup of The olive oil baste you’ll want to use on everything or store bought olive oil

  • 2 TBS Everything Bagel seasoning (optional)

  • 1 cup jarred pizza sauce or my homemade pizza sauce – Your New Favorite Pizza Sauce Recipe room temperature

  • 2 cups shredded cheese – combination of mozarella, provolone and Monterey Jack

  • Pepperoni slices (20 -30, depending on your preference)

  • 1/8 cup Grated Parmesan Cheese

Directions

  • If dough was refrigerated, bring to room temperature in bowl with lid. (1-2 hours)
  • Place pizza stone in oven. Preheat oven to 475 degrees Fahrenheit.
  • While your oven is preheating, place your dough on a lightly floured surface.
  • Flatten dough gently and spread out the dough, using your fingertips. Push gently from the middle with a poking, pushing motion, all the way out to the sides. Flip over and do the same to the other side. Repeat this 3 more times. If dough is sticky, use a small amount of flour on your hands. If you’re feeling particularly brave, a few tosses in the air will do it some good.
  • Cover dough with a clean kitchen towel for about 10 minutes. Then repeat step four.
  • In the meantime, gather your other ingredients.
  • When oven is done preheating, sprinkle your pizza peel with semolina flour. Carefully place dough on peel. Stretch and shape the dough to desired size. Dough should be able to slide easily on peel. If it sticks anywhere, use more flour.
  • Take your pizza stone out of the oven carefully. It will be very hot. With one quick jerking motion, slide dough from peel onto stone. This takes practice. Pull at sides of dough for final shaping.
  • Brush olive oil lightly over entire top of dough. Sprinkle Everything Bagel Seasoning if desired.
  • Place pizza back in oven. Let dough bake for 5 minutes. This will be your first bake.
  • After it has baked for 5 minutes, take pizza out of oven. You are now ready to apply the toppings.
  • Spoon pizza sauce over top being sure to go almost to the edges. Next, sprinkle on the cheeses. Then spread out the pepperoni on top. Brush the edges of the dough with olive oil and back in the oven it goes.
  • This will be your second bake. Bake for 10-15 more minutes, keeping a careful eye on it. The pizza is done when the dough is golden, and the cheese is bubbling. Immediately after taking it out of the oven, brush the edges one more time with olive oil and then lightly sprinkle grated parmesan cheese on top of entire pizza.
  • Let cool for a few minutes and then slice it up and enjoy!

Make bacon the star in your appetizer

I use bacon in a lot of my party food recipes.

I like to cook a batch of bacon ahead of time and keep it in the refrigerator for later use. 

Cooked bacon is good in the fridge for 4 – 5 days.  To store it, let cooked bacon cool down completely and then put in an airtight bag in your refrigerator.

Low and Slow Bacon

There are many ways to cook bacon. Because we are in the dog days of summer right now, I don't want to turn on the oven. So we will be cooking it on the stovetop.

  • nonstick heavy duty frying pan or wok
  • 6 slices raw bacon
  • 1/8 cup water
  1. 1. Lay your bacon strips side by side in cold pan.

    2. Pour 1/8 cup of water on top of bacon.

    3. Turn the stove to med/high. Cook until all water has evaporated. Approximately 5 minutes. This helps to render down the fat.

    4. Once water has evaporated, turn heat down to med/low.

    5. Occasionally rearrange bacon, and flip it, to ensure even cooking.

    6. Once the bacon as reached your happy level of crispiness, approximately 10 – 15 minutes.

    7. Turn off the heat and let the bacon drain on a paper towel lined plate.

Once your pan has cooled down a little, pour excess bacon grease into a mason jar and store in fridge. We will be using this in other recipes. Bacon grease is full of flavor. Do not discard it.

Quick and Easy Pizza Logs

Everybody loves pizza logs. You can do them many ways.  Sometimes I use eggroll wrappers.  Sometimes I use homemade pizza dough.  Sometimes I make the dipping sauce by scratch and sometimes I just buy a jar of marinara or pizza sauce and call it a day.

This is the quick and easy way. We will go back to basics another day.

Air Fryer Pizza Logs

This is a very easy recipe. I used jarred pizza sauce and pre-packaged eggroll wrappers. I usually like to make my own sauce and eggroll wrappers from scratch, but I wanted to keep this recipe fast and simple. Because sometimes the party shows up when you least expect it.

I will add the longer "from scratch" version in the future.

  • Air Fryer
  • pastry brush
  • l pkg eggroll wrappers
  • 1 pkg pre-sliced pepperoni
  • 1 pkg whole milk mozzarella cheese sticks
  • 1/4 cup extra virgin olive oil
  • 1/4 cup Everything Bagel Seasoning
  1. Pre-heat air fryer to 350 degrees Fahrenheit.

    Set up your rolling station by laying out your ingredients in the following order:

    Eggroll wrappers, bowl of water, pepperoni slices, mozzarella cheese sticks, olive oil, Everything Bagel Seasoning.

    1. Lay out an eggroll wrapper in diamond position.

    2. Brush water around the edges of the wrapper (this will be the sealing agent)

    4. Place 5 pepperonis in a line in lower middle of eggroll wrapper, being sure to leave a 1/2" margin on either side.

    5. Place cheese stick on top of line of pepperoni.

    6. Take the tip of the wrapper facing you and fold bottom corner of wrapper over filling.

    7. Roll snugly halfway to cover the filling.

    8. Fold in left and right side like an envelope.

    9. Firmly but gently, finish rolling, keeping the roll as tight as possible with ripping it. You will get better at this with practice.

    10. Brush entire pizza roll lightly with olive oil and then sprinkle some Everything Bagel Seasoning on it.

    10. Place seam side down in pre-heated air fryer basket.

    Repeat with rest of eggroll wrappers. You may have to cook in batches depending on the size of your air fryer basket. You want to keep a space between each pizza log.

    Cook for 10 minutes, flipping halfway through. Eggrolls should be a light golden brown. Check every few minutes to keep them from burning. Every air fryer is different.

    When they have cooked to your preferred crispness, remove them from air fryer and let them cool on a cooking rack for a few minuters. Serve with a small bowl of pizza sauce.

This can also be made in the oven.  Preheat oven to 450 degrees and cook a few more minutes on each size.
